I have been successful changing existing names like changing Apple to Banana but is it even possible to add new stocks to the global stock market? Do I just have to change names of the existing ones?

Yes, you can add new global stocks to the file.

Idk if I'm doing something wrong but when I go to the "Stocks" spreadsheet and add for example Tesla and all the values then save the file then pack the mod and load it from the game it does not show up there. Do I need to change other files?

Stocks.dbf is the only file you need to change.
